POTATO LEEK CARROTS AND PRAWN SOUP

Here is a plate full of colors for a rejoicing light dinner and your body says thank you mum. You just can’t beat this kind of drinking soup or light meal on a rainy day too.

The leeks are rich in minerals, vitamins, fiber and antioxidants you know, great source of Vitamin K and the B vitamins essential for cells growth and development .

This soup is flavorful, rich in nutrition and so filling too. So easy and fast too to cook.
Healthy Soups should never be bland, should never lack colors that speaks volumes of the nutritional benefits. This soup would not disappoint you.

Ingredients
3 stalk leeks ( white and Green Parts) chopped
6 Irish Potatoes ( cubed)
6 Prawns ( dressed)
Bell Peppers ( yellow, Green, and Orange)
2 Carrots cubed
1 tsp Thyme
1/4 Tsp Oregano
1 tbsp Cayenne Pepper
Onions chopped
Purple and white Cabbage ( roughly chopped)
1 tsp minced garlic
1 tsp minced ginger
Chicken bullion/ Salt to taste
6 cups Chicken Stock
2 tbsp Cornstarch ( for a little Slurry feel)
